Khanyi's Greek salad

  • 6
    medium tomatoes
  • 1
    large English cucumber
  • 1
    small red or green pepper
  • 2
    small onions, sliced
  • 250
    feta with herbs
  • 250
    black olives, drained
  • small handful chopped fresh herbs
  • 120
    good olive oil
  • 60
    white wine vinegar
  • 1
    clove garlic, crushed
  • a good pinch of castor sugar
  • salt and freshly ground black pepper


1. Cut tomatoes into wedges and the cucumber (unpeeled) into strips. Slice the pepper thinly and remove the pith and seeds. 2. Toss the tomato, cucumber, onions and pepper together on a platter. Break up the feta cheese into chunks and arrange this and the olives on top of the salad, sprinkling with the herbs. 3. Whisk the dressing ingredients together and drizzle over just before serving.
