John’s warm tomato salad

    125ml balsamic vinegar

    15ml soft brown sugar
  • 0
    1.25 ml salt
  • 0
    10ml olive oil
  • 0
    500g cherry tomatoes
  • 0
    1.25ml freshly ground black pepper


1. Pour the balsamic vinegar, brown sugar and salt into a frying pan or shallow saucepan.
2. On low to medium heat, reduce the vinegar until it is thick and syrupy (about 5 minutes). Be careful not to burn the syrup.
3. Add the oil.
4. Add cherry tomatoes and turn up the heat to medium high. The tomatoes will start to split, releasing some of their juice into the syrup. The syrup will start to thin out a little.
5. Keep stirring or tossing the tomatoes in the syrup until that are all coated and show signs of splitting. Season with pepper.
6. Serve as one of the vegetables at any meal.
