Jammy chicken and noodles

    sunflower oil
  • 500

    chicken, sliced thinly
  • 60
    ml
    oyster sauce
  • 60
    ml
    chilli jam or jelly
  • 300
    g
    mangetout or sugar snap peas
  • 400
    g
    Chinese-style egg noodles, cooked
  • fresh coriander, to serve
  • 1
    lemon or lime, cut in wedges, to serve
 

Method

 
Heat the oil in a wok or large frying pan.
Add the chicken and stir-fry until browned.
Add the oyster sauce, jam and peas and cook for one minute.
Toss through the noodles and coriander.
Serve in bowls with a wedge of lemon or lime to squeeze over just before you eat.

Buy jars of chilli or jelly at supermarkets and delis.
