Jam tarts

  • 1
    quantity rich shortcrust pastry, chilled (see treacle tart recipe)
  • selection of conserves such as lemon curd, orange curd, strawberry jam, raspberry jam, blueberry jam
  • 1
    beaten egg, to glaze

Grease and flour two mini muffin or patty pan trays. Roll the pastry out onto a lightly floured surface and use a 5 cm star cutter to stamp out 18 pastry shapes. Gently press them into the mini muffin tins. Put a generous teaspoon of conserve into each pastry case. Brush the pastry edges with egg to glaze and bake in preheated 220 ºC oven for 10 to 15 minutes, or until pasty is golden.
