8.00 tomatoes
2.00 garlic — whole head
250.00 ml fresh chillies — 573
12.00 fresh basil
12.00 olives — black, crushed
salt
black pepper — freshly ground

Method:

Preheat oven to 180 ºC. Place tomatoes and garlic in a baking dish. Bake for 15-20 minutes, or until tomato skins burst. Separate garlic cloves and peel them. Place tomatoes and garlic in a bowl and add olive oil, basil leaves, olives and seasoning. Refrigerate until cold. Serve with crusty bread.
Serves 4.
