Ingredients (11)

500.00 g pasta — spirals
425.00 g chickpeas — tinned and drained
15.00 cherry tomatoes — halved
1.00 cucumber — English, diced
5.00 spring onion — chopped
1.00 red pepper — diced
225.00 g feta cheese — diced
SALAD DRESSING
100.00 ml fresh chillies — 573
80.00 ml vinegar — balsamic
sea salt and freshly ground black pepper
65.00 ml fresh parsley — chopped

Method:

Mix all the salad ingredients together in a large salad bowl and pour over the olive oil and balsamic vinegar. Season generously with salt and black pepper and stir in the chopped fresh parsley. Serve at room temperature.
Serves 6.
