Italian fish bake

    fish steaks
  • 1
    onion, sliced
  • 1
    clove of garlic, chopped
  • 1
    can
    chopped tomatoes
  • 10
    ml
    tomato paste
  • 125
    ml
    dry white wine
  • 5
    ml
    dried Italian herbs
  • 2
    peppers, sliced
  • cooked pasta or potatoes, to serve
  • fresh parsley or origanum, to garnish
 

Method

Preheat oven to 180°C.

Drizzle an ovenproof dish with olive oil. Place the fish in the dish and season well.

Mix the onion, garlic, tomatoes, tomato paste, wine and herbs together. Pour into the dish over the fish. Add the peppers and drizzle with a little olive oil. Cover with foil and bake for 15 minutes. Remove the foil and bake for another 10 minutes or until the fish is cooked. Serve on cooked pasta or with baked potatoes, sprinkled with fresh parsley or origanum.
