Italian bread

    small French loaves

    butter, melted

    Italian herbs
  • salt and freshly ground black pepper

    mozzarella cheese, sliced
  • 2
    large ripe tomatoes, sliced

    anchovy fillets, drained but reserve the oil

Preheat the oven to 180 ºC (350 ºF). Cut the French loaves lengthwise, but not all the way through. Hollow out the insides. Blend the butter and seasonings and brush the inside of the loaves with the mixture. Arrange alternating slices of cheese and tomato in each of the loaves. Roll up the anchovy fillets and arrange in between the tomato and cheese slices. Brush the outside of the loaves with the anchovy oil. Wrap individually in aluminium foil and place in the oven till the cheese has melted. The loaves may also be placed on a braai till warmed through. Serve immediately. Serves 8-10.
