Italian biscuits

    butter, at room temperature
  • 100
    icing sugar, sifted
  • 25

    cake flour, sifted
  • 75
    hazelnuts, toasted and coarsely ground (or ground almonds)
  • almond slivers and extra icing sugar

Preheat the oven to 180 ºC. Lightly grease a baking sheet with butter or margarine or pray with non-stick spray. Cream the butter and icing sugar until light and fluffy. Add the honey and beat well. Add the cake flour and ground hazelnuts and mix to form a smooth dough. Break off bits of dough and roll into balls. Top each ball with pieces of hazelnut or almond and place on the prepared sheets. Bake for about 15 minutes until firm but not browned. Roll in icing sugar while hot allow to cool and store in airtight containers. Makes about 30 biscuits.
