Italian bean salad

    small onion, finely chopped

    stalk celery, finely chopped

    red chilli, seeded and chopped
  • 10
    chopped oregano
  • 400
    each, of canned butter beans, sugar beans and red kidney beans, drained

    ripe tomatoes, seeded and chopped

    chopped fresh parsley
  • 1
    lemon, juice
  • salt and pepper

    olive oil
  • 45
    lemon juice
  • salt and pepper


Mix all the salad ingredients and season to taste with salt and pepper.
Blend the ingredients for the dressing and pour over the salad.
Stand for at least 2 hours to allow the flvours to develop.
