Ingredients (12)

300.00 g beans — red, dried
300.00 g black beans — dried
300.00 g white beans — dried
400.00 g green beans — blanched
6.00 red pepper — roasted, strips
4.00 red onions — chopped
rocket
DRESSING
250.00 ml cream
170.00 ml mayonnaise
2.00 lemon — juice only
12.00 garlic — cloves, crushed
salt and freshly ground black pepper

Method:

Soak dried beans in separate containers overnight in water to cover. Drain through a colander, place in a saucepan, cover with fresh water and bring to boil. Reduce heat and simmer for 1 1/2 hours, or until cooked but not mushy.
Drain through a colander and rinse under cold running water.
Carefully add blanched green beans.
DRESSING: Whip cream, mayonnaise, lemon juice and garlic together. Season. Mix beans with dressing.
Serve on a bed of rocket or lettuce, garnished with peppers and onion.
