Italian amore

    rice noodles

    vanilla essence
  • nutmeg
  • mint leaves (to garnish)


Preheat the oven to 160 ºC (325 ºF). Grease 2 or 3 ovenproof dishes that can each fit into an oven pan. Cook the rice noodles in rapidly boiling salted water until just soft. Drain. Heat the milk and add the drained noodles. Bring to the boil, then cool slightly. Beat the eggs, sugar and vanilla essence together and mix small quantities at a time with the noodle mixture. Pour the mixture into the prepared dishes and sprinkle with a little nutmeg. Place each dish in an oven pan half filled with water. Bake for about 1 hour or until the egg mixture has set and is golden brown on top. Spoon into dishes and serve with a small scoop of apricot jam. Decorate with a mint leaf. Serves 10-12.
