Ingredients (7)

750.00 g mutton — stewing
1.00 Litres water — salted
900.00 g cabbage
10.00 bacon — streaky
2.00 onions — medium
salt and freshly ground black pepper
2.00 ml fresh rosemary

Method:

Cut the stewing mutton into cubes and simmer in salt water for about an hour.
Wash, drain and quarter the cabbage head. Allow to boil quickly for 15 minutes and drain after that. Chop roughly.
Cut the rind off the bacon. Line a heavy-based pot with the bacon strips.
Put the pieces of meat and cabbage in the pot in layers.
The top layer must be cabbage.
Peel and cut the onions in rings. Place in the pot.
Season with salt, pepper and rosemary. Pour the stock over the top.
Cover and simmer for approximately one hour until cooked.
