Irish stew

  • 1
    onion, sliced
  • 2
    cloves garlic, crushed
  • 10
    fresh ginger, grated
  • oil

    mutton rib, sawn into pieces
  • salt and black pepper
  • hot water
  • 2
    large potatoes, cut into pieces
  • 2
    carrots, chopped
  • 450
    courgettes, sliced, or waterblommetjies (optional)
  • 70
    tomato paste
  • 10
  • pinch nutmeg


Sauté the onion, garlic and ginger in a little oil until soft. Season the mutton rib with salt and black pepper to taste, add to the saucepan and brown. Add a little hot water, cover and simmer until the meat is nearly tender. Add the potatoes, carrots, courgettes and tomato paste and more hot water if necessary and simmer until the meat is tender, the vegetables are soft and a thick gravy has formed. Add the sugar and a pinch of nutmeg and extra salt and black pepper if necessary. Serve with rice. Serves 2-3.
