Irish mashed potatoes with blue cheese and butter

Ingredients (7)

800.00 g potatoes — peeled and cubed
3.00 fresh chives
200.00 ml milk — hot
50.00 ml butter
175.00 g blue cheese
sea salt and freshly ground black pepper

Method:

Boil the potatoes in lightly salted water until tender. Drain and transfer to a mixing bowl.
Chop the chives, including green sections, and add to the milk. Bring the milk to the boil, reduce the heat and simmer gently for 2-3 minutes. Leave for 10 minutes so the flavour can develop.
Mash the potatoes and add the chives and milk as well as the butter. Mix well and season with salt and pepper. Reheat if necessary and spoon into small serving dishes.
Make a small hollow on top of each portion of mashed potatoes and crumble the blue cheese into each hollow. Drizzle the melted butter on top and serve hot.
Serves 4.
