140.00 g flour — cake
210.00 g castor sugar
1.00 ml salt
5.00 ml Bicarbonate of soda
2.00 ml mixed spice — ground
5.00 ml cinnamon — ground
1.00 ml cloves — ground
1.00 ml nutmeg — ground
1.00 ml ginger — ground
2.00 bananas
100.00 ml oil
200.00 ml Buttermilk
3.00 eggs — extra-large

Method:

Preheat oven to 160 ºC (325 ºF). Grease a 22 cm cake tin and dust with cake flour. Sift the dry ingredients together in a mixing bowl. Mash the bananas in a bowl, add the oil, sour milk and eggs and beat well. Add the dry ingredients and beat until well blended. Turn into the prepared cake tin and bake for about 40 minutes, until a testing skewer comes out clean when inserted into the centre of the cake and the cake has shrunk from the sides of the tin. (Because the cake is quick to mix it may have a coarse texture.) Serve with cream or, if desired, divide the cake into 2 layers, sandwich them together with apricot jam and dust the cake with icing sugar. Makes a medium-sized cake.
