Instant lemon ginger beer

  • 80
    fresh ginger, finely grated
  • 2
    lemons, the grated rind
  • 1
    lemon, the juice
  • 80
    honey or brown sugar
  • 100
    strong rooibos, chilled
  • 2
    lemonade or ginger ale
  • ice cubes for serving
  • mint leaves for garnishing
  • Makes about 2.5 litres


Place the ginger, lemon rind, lemon juice and honey or sugar in a mortar.
Mash with a pestle until the flavours are well blended.
Add the rooibos.
Add the lemonade or ginger ale just before serving.
Strain into a glass jug.
Serve with plenty of ice and garnish with mint leaves.
