Icing a fruit cake

  • apricot jam
  • readymade marzipan
  • readymade plastic icing


Cool cake completely. Heat 125ml (1/2 cup) apricot jam until runny and brush over cake. Roll out marzipan and use it to cover the cake. Cover with a clean cloth and let it stand overnight. Roll out plastic icing (available from most supermarkets) and drape it carefully over the cake, using a rolling pin and palette knife. Trim the edges neatly and decorate the cake as desired.
