Iced chai

  • 1
    litre water
  • 4
    English breakfast teabags
  • 5
    piece fresh ginger, cut into strips
  • 2
    cardamom pods, crushed
  • 4
    stalks lemongrass, crushed and sliced
  • 150
    caster sugar
  • 50
    cold fresh lemon juice
  • 500
    cold apple juice
  • 1
    lemon, thinly sliced
  • 1
    litre mineral water


Bring the water, teabags, ginger, cardamom, lemongrass and caster sugar to the boil in a large saucepan.

Reduce the heat and simmer for 3 minutes, stirring occasionally.

Remove the teabags and refrigerate the tea until ice cold.

Strain through a sieve and stir in the fruit juices and lemon slices.

Add the mineral water just before serving and pour into glasses filled with ice cubes.
