Ice cream with peppermint and chocolate

  • 100
    milk chocolate, broken into squares
  • 100
    peppermint creams
  • 150
  • 300
    thick cream
  • 2
    egg yolks
  • 2


Place the chocolate, peppermint creams, milk and cream in a saucepan and heat slowly while stirring continuously until the chocolate has melted. Alternatively, melt in a glass bowl in the microwave oven. Set aside. Whisk the egg yolks and eggs together until creamy. Slowly add the chocolate mixture while beating continuously. Pour into a dish and freeze, beating occasionally with a fork to break up the ice crystals. Freeze until hard. Serve with extra cream and a sprig of mint. Serves 6.
