  • 250
    chickpeas, soaked in water overnight
  • 2
    cloves garlic, crushed
  • 1
    lemon, juice
  • salt and black pepper to taste
  • olive oil and paprika

Pour off the chickpea soaking water and boil the chickpeas in clean water until soft. Drain, but reserve about 125 ml (1/2 cup) of the water. Mash with 125 ml water. Add the garlic, lemon juice, salt and pepper and mix to form a spread. Spoon into a dish and pour over a little olive oil. Sprinkle with paprika. Makes about 500 ml.
