Ingredients (9)

1.00 onion — small, chopped
1.00 garlic — cloves, crushed
1.00 red chilli — small, finely chopped
fresh chillies — 573
4.00 tomatoes — peeled, deseeded and chopped
5.00 fresh basil — torn
6.00 eggs — beaten
salt and freshly ground black pepper
mozzarella cheese — grated

Method:

1. Cook the onion, garlic and chilli in oil over low heat. When softened, add the tomatoes and basil. Cover and leave to cook until the tomatoes look slightly mushed.
2. Add the beaten eggs, salt and pepper to taste and leave to set. When it is firm throughout but still creamy on top, sprinkle on several tablespoons of cheese and put under a hot grill until bubbling. Serve piping hot, with extra basil on top and plenty of fresh crusty bread.
