Ingredients (12)

750.00 g potatoes — peeled and boiled
oil
2.00 onion — finely chopped
250.00 g bacon — streaky
SAUCE
15.00 ml butter
15.00 ml cornflour
250.00 ml milk
salt — pinch
100.00 ml chutney
30.00 ml vinegar — white
25.00 ml mayonnaise
10.00 ml jam — apricot

Method:

Slice the potatoes into chunks and place in a dish. Sauté the onion in a little oil until tender and add to the potatoes. Fry the bacon until done, chop finely and add to the potatoes. Melt the butter, stir in the cornflour and heat for about 1 minute. Add small quantities of the milk at a time, stirring until smooth. Heat while stirring continuously until the mixture comes to the boil and thickens slightly. Season with salt and pepper to taste. Remove from the heat and add the remaining sauce ingredients. Mix well. Pour over the potatoes and serve hot.
Serves 4-6.
