Hot pasta with fresh tomato sauce

  • 500
    penne, cooked al dente and kept warm
  • Parmesan cheese shavings to garnish
  • 8
    medium tomatoes, diced
  • 1
    red sweet pepper, seeded, trimmed and diced
  • 3
    garlic cloves, peeled and crushed
  • 125
    olive oil
  • 125
    chopped parsley
  • salt and milled black pepper to taste


SAUCE: Place tomatoes, sweet pepper, garlic, olive oil, parsley, salt and pepper in a bowl and mix well. Divide hot pasta among 4 bowls. Top with tomato sauce. Garnish with Parmesan shavings and serve with hot buttered naan bread.
