Hot 'n spicy chicken

    chicken portions
  • 2
    onions, finely chapped
  • 4
    cloves garlic, crushed
  • 30
    fresh ginger, grated
  • 2
    fresh green chillies, seeded and finely chopped
  • 4
    tomatoes, peeled and finely chopped
  • 12
    dried curry leaves
  • 30
    lemon juice
  • 5
  • salt and freshly ground black pepper
  • 60
    freshly chopped coriander leaves


Heat the oil in a large saucepan and fry the chicken until brown. Remove from the pan and sauté the onion, garlic, ginger and chilli until soft. Return the chicken to the pan, reduce the heat and add the tomatoes. Add the curry leaves, lemon juice and sugar and season to taste with salt and pepper. Simmer for 15-20 minutes or until the chicken is tender and done. Stir in the fresh coriander leaves and serve with basmati rice. Serves 3-4.
