Hot mushroom and blue cheese roll

    chopped parsley
  • 4
    large fresh brown mushrooms, wiped clean
  • 1
    French loaf
  • lettuce and sliced tomato to serve
  • 4
    large slices Cambenzola cheese


Melt butter in a frying pan and stir in parsley. Fry mushrooms for about 2 minutes on each side, or until cooked. Remove mushrooms. Cut French loaf into 4 pieces, and halve each horizontally. Dip cut side of each French loaf slice into remaining buttery mixture. Place lettuce and tomato slices on 4 bottom halves of French loaf. Top each with mushrooms and a slice of cheese and grill until cheese has melted. Top with remaining French loaf halves and serve immediately.
