Hot garlic oysters

    clove garlic, crushed
  • 1
    onion, peeled and finely chopped
  • 30
    parsley or dill, chopped
  • 1
    lemon, juice
  • 12
    oysters, shucked
  • fresh breadcrumbs, to cover


Mix butter, garlic and onion together. Add the lemon juice. Place oysters in a roasting pan and spread butter over them. Sprinkle liberally with breadcrumbs and cook them under a very hot grill for about 5 minutes or until the butter begins to bubble and the crumbs brown slightly. Scatter with chopped parsley or dill and serve immediately. Serves 2.
