Hot fudge sauce

  • 200
    white sugar
  • 180
    hot milk
  • 5
    vanilla essence


10‑15 minutes
Place butter and sugar in a saucepan and cook over low heat until syrup is a light caramel colour. Remove from heat and add milk. Return to low heat and stir until the sugar caramel has dissolved completely. Continue to stir over heat until smooth and thick, then add vanilla essence. Serve hot over ice cream, baked puddings or poached fruit. Makes 600 ml.
