Ingredients (14)

4.00 flour — cake
5.00 ml salt
3.00 ml mixed spice — ground
3.00 ml cinnamon — ground
60.00 ml sugar
60.00 g butter — or margerine
10.00 g Superbake Instant Yeast
375.00 ml milk — lukewarm
1.00 eggs — extra-large, beaten
125.00 ml sultanas
30.00 ml jam — smooth, apricot
125.00 ml flour — cake
10.00 ml castor sugar
80.00 ml water

Method:

1. Sift together flour, salt and spices. Add sugar and mix. Rub butter into the flour with fingertips. Add yeast.
2. Add milk, egg and sultanas and mix well. Knead on a lightly floured surface until smooth and elastic, cover and leave to rise for 15-20 minutes.
3. Divide dough into 16 pieces and knead each piece into a round shape. Pack buns closely together on a greased oven pan. Set aside in a warm place for 15 minutes until doubled in size.
4. For paste: Mix all ingredients to a smooth paste. Spoon into a piping bag fitted with a small tube, and pipe crosses onto buns.
5. Bake at 200ºC for 20 minutes. Brush tops with hot jam while buns are still hot.
