Ingredients (17)

750.00 ml flour — cake
5.00 ml salt
60.00 ml sugar
2.00 ml sugar
2.00 ml mixed spice — ground
2.00 ml nutmeg — ground
5.00 ml cinnamon — ground
10.00 g dried instant yeast
60.00 ml margarine
160.00 ml milk — lukewarm
250.00 ml dried fruitcake mix
For topping
125.00 ml flour — cake
1.00 ml salt
60.00 ml oil
160.00 ml milk
1.00 eggs — large, beaten
0.00 sugar water — glazing

Method:

Preheat oven to 200 &degC.
Grease a baking tray.
Mix flour, salt, sugar, mixed spice, nutmeg and cinnamon together.
Add instant dry yeast and mix.
Melt margarine in lukewarm milk and cool slightly.
Add mixture to dry ingredients, together with beaten egg and enough lukewarm water to form a soft dough.
Knead dough well for 10 minutes, until smooth and elastic.
Place dough on a lightly floured surface, cover with greased plastic and leave to rest for 15 minutes.
Knock dough down and work in the dried fruit while kneading.
Divide dough into 18 equal pieces.
Shape each piece into a bun and place on a greased baking tray.
Cover with greased plastic and allow to rise in a warm place until double in volume (about 25 to 30 minutes).
Prepare topping by mixing flour, salt and oil together.
Gradually add milk until the batter is thin enough to pipe, but thick enough to retain its shape.
Brush buns with beaten egg and pipe a cross over each bun.
Bake for 15 to 20 minutes.
Glaze buns with warm sugar water as they come out of the oven.
