Ingredients (8)

30.00 ml butter
50.00 ml fresh chillies — 573
500.00 g chicken livers — halved
15.00 ml vinegar — brown grape
5.00 ml mustard — powder
50.00 ml brandy
salt and freshly ground black pepper
lettuce — to garnish

Method:

Heat the butter and olive oil in a pan. Add the chicken livers and fry until brown on the outside but still slightly pink inside. Add the vinegar, mustard powder and brandy and stir-fry for about another minute.
Serve on four side plates and garnish with fresh lettuce leaves or sprigs of fresh herbs. Serves 4.
