Hot beetroot in orange sauce

  • 800
    g
    beetroot (stems removed) and washed
  • 1
    piece stick cinnamon
  • 250
    ml
    fresh orange juice
  • 30
    ml
    fresh lemon juice
  • 5
    ml
    lemon rind
  • 45
    ml
    soft brown sugar
  • salt to taste
  • 10
    ml
    cornflour, blended with a little cold water
 

Method

 
Boil the beetroot in a little water until soft. Drain well and remove the skins. Set aside. Mix the remaining ingredients, except the cornflour and bring to the boil. Simmer for 5 minutes, add the cornflour and simmer until the sauce thickens. Pour over the beetroot and heat once more. Serve hot.
