Honey soy sausages with roasted red onion and lentil salad

Ingredients (12)

400 g sausages — pork
2 Tbs soy sauce
2 Tbs honey
Salad:
1 cup lentils — brown
4 red onions
2 Tbs sunflower oil
2 Tbs vinegar — balsamic
2 rocket — torn
2 fresh parsley — chopped
200 g feta cheese
1/3 cup olive oil — extra virgin
1/3 cup vinegar — balsamic

Method:

Toss the pork sausages with the soy and honey. Preheat the oven to 200°C.

Simmer the lentils in a pot of unsalted boiling water until tender (about 20 minutes).

Halve the onions, peel and cut into wedges, toss with the oil, balsamic, salt and pepper and roast for 45 minutes.

Add the onions to the lentils, along with the rocket, parsley and feta. Mix together the extra-virgin olive oil and balsamic, pour over and toss.

Bake the sausages for 20-30 minutes or until cooked through, and grill to brown if necessary. Serve alongside the salad.
