Honey fruit kebabs

    pineapple, peeled and cubed
  • 1
    mango, peeled and cubed
  • 2
    large bananas, peeled and sliced into chunks
  • 2
    pears, peeled and cubed
  • 75

    lemons, rind and juice
  • 225
    mascarpone or cream cheese
  • lemon wedges, to garnish


about 10 minutes
Thread the pieces of fruit onto wooden or metal skewers. Place 45 ml honey and rind and juice of a lemon into a small bowl and heat in the microwave until warm. Brush the fruit kebabs with the honey and lemon mixture, then place on a baking tray and cook under a hot grill. Baste frequently with the remaining honey and lemon mixture and turn the kebabs until all sides are golden brown. Meanwhile, beat the cheese with the remaining lemon rind and juice and remaining honey. Serve with the warm kebabs and garnish with lemon wedges.
