Honey and soya roasted duck

  • 4
    garlic cloves, peeled and roughly chopped

    x 5 cm small knob ginger, peeled and roughly chopped

    soya sauce
  • 45

    honeysoy marinade or Indonesian thick soya sauce
  • 1
  • 5
    fresh bay leaves
  • salt and pepper


Heat the oven to 180 °C.
In a small bowl, place the garlic, ginger, soya sauce, honey, oil and honey soy marinade and whisk together well.
Place the duck in a roasting pan, and pour the mixture over the duck, rubbing it into the duck, place the bay leaves around and season with salt and pepper.
Place the roasting pan into the preheated oven and roast for about an hour, basting frequently.
Remove from the oven, allow to rest for 10 minutes, and then carve.
Serve with succulent roasted root veggies.
COOK'S NOTE: If you don't fancy duck, try this recipe using chicken ? it's just as delicious.
