Ingredients (9)

160.00 g honey
145.00 g treacle sugar
5.00 ml cinnamon — ground
10.00 ml ginger — ground
100.00 ml water — boiled
15.00 ml brandy — or orange juice
255.00 g flour — cake
5.00 ml Bicarbonate of soda
1.00 eggs — large, lightly beaten

Method:

Preheat oven to 150 ºC. Place 110 g of honey, the sugar and the spices in a bowl and pour in the boiling water and brandy or orange juice. Stir well. Add the flour, bicarbonate of soda and egg and stir well.
Pour into a greased and lined loaf tin and bake in the oven for 1 hour, or until a skewer inserted in the centre comes out clean. Cool for 15 minutes before removing from the tin. Glaze with the remaining honey.
Makes 1 loaf (22,5 x 11,5 cm).
