Homemade vanilla custard

    vanilla pod, split lengthways - seeds removed
  • 2
    egg yolks
  • 1
    castor sugar
  • 1
    cornflour (optional)


Heat the milk, cream and vanilla in a small saucepan until hot, but not boiling.

In a small bowl, whisk the egg yolks, caster sugar and cornflour until smooth.

Slowly add 1/4 cup of the warm milk / cream mixture to the egg yolk mixture, whisking while adding.

Add the egg mixture (which now has a little warm milk in it) to the saucepan of warm milk and cream.

Place on a medium heat and cook until thickened, whisking all the time - about 5 minutes.

Enjoy immediately.
