Homemade pesto for your pasta

Chef Caro it's about time to make some back-up supplies of basil before they start flowering.

Ingredients (10)

fresh basil
fresh ginger — peeled, chopped
garlic — cloves
chillies
lemon — juice only
brown sugar
cashew nuts — roasted
parmesan cheese — grated
olive oil — extra virgin
salt and freshly ground black pepper — to taste

Method:

Whizz all the ingredients in a blender and season to taste. You can add more chillis for fire, ginger for freshness or lemon for tartness and of course more garlic if you want to ward away all those pesky (but sexy) vampires.

It’s fun to play around and tweak it to your palate or the dish you want to serve it with.
