Ingredients (12)

30.00 ml butter
5.00 ml garlic — cloves, crushed
2.00 large onions — very finely chopped
2.00 carrots — grated
500.00 ml cabbage — finely shredded
5.00 ml soy sauce — optional
1.00 ml dried mixed herbs
sea salt and freshly ground black pepper
190.00 ml english cucumber — finely grated
5.00 ml vinegar — white garpe
400.00 ml mayonnaise — low-fat
5.00 ml lemon juice

Method:

Melt the butter in a medium-sized saucepan and slowly sauté the garlic, onions, carrots and cabbage over medium heat for 1 minute. Add the soy sauce, herbs and salt and pepper to taste and sauté slowly for 5 minutes. Leave on the stove plate and add the cucumber. Cover and leave on the hot stove plate for 2 minutes. Stir and leave to cool. Add the remaining ingredients to the vegetables and mix. Spoon into sterilised jars and store in the fridge.
Makes about 1 litre sandwich spread.
