    brandy
  • 750
    ml
    white sugar
  • 30
    ml
    rum essence
  • 170
    g
    orange rind, finely sliced
  • 30
    g
    naartjie peel, finely sliced
  • 7
    ml
    nutmeg
  • 8
    whole cloves
  • 4
    cinnamon sticks
 

Method

 
Heat the brandy, sugar and rum essence in a saucepan until the sugar has dissolved. Do not overcook. Remove from the heat and add the spices and rind. Pour into a sterilised jar and leave for a month in a cool place. Shake the jar every day. Strain through cheesecloth, pour into sterilised bottles and seal.
