Ingredients (8)

750.00 ml brandy
750.00 ml white sugar
30.00 ml rum — essence
170.00 g orange — zest only
30.00 g naartjies — zest only
7.00 ml nutmeg — ground
8.00 cloves — whole
4.00 cinnamon — stick

Method:

Heat the brandy, sugar and rum essence in a saucepan until the sugar has dissolved. Do not overcook. Remove from the heat and add the spices and rind.
Pour into a sterilised jar and leave for a month in a cool place. Shake the jar every day.
Strain through cheesecloth, pour into sterilised bottles and seal.
