Homemade mayonnaise

    jumbo egg yolk
  • 15
    ml
    wine vinegar
  • pinch salt
  • milled black pepper
  • 1
    clove garlic
  • 2
    ml
    mustard powder
  • 250
    ml
    salad oil
 

Method

 
Whisk egg yolk, vinegar, salt, pepper, garlic and mustard in a warmed bowl until thick and frothy.
Slowly add oil, drop by drop at the very beginning, but in a steady trickle as mayonnaise begins to thicken.
When mayonnaise is thick, smooth and creamy, add a little more vinegar or lemon juice to sharpen the flavour, if desired.
