Ingredients (6)

3.00 large oranges — grated rind and juice
1.00 lemon — zest and juice
500.00 ml white sugar
125.00 g butter — diced
10.00 ml cornflour — mixed with water
5.00 eggs — extra-large, lightly whisked

Method:

Heat the rind, juice and sugar over medium heat and add the butter, stirring until the sugar has dissolved and the butter melted. Allow the mixture to cool slightly before beating in the cornflour and eggs. Return to the stove and simmer slowly for about 20 minutes, stirring continually. Pour into clean jars while still hot and cover with plastic wrap.
Makes about 500 ml curd.
