Ingredients

  • 600
    g
    silken/soft tofu
  • 4
    cloves garlic, crushed
  • 60
    ml
    white balsamic or apple cider vinegar
  • 10
    ml
    milled pepper
  • 125
    ml
    water
 

Method

 
Blend all ingredients.
Process until smooth (the grainy consistency will disappear the more you blend.)
Refrigerate until ready for use.

Per 25 ml portion: Energy 98 kJ; Protein 2g; Fat 1,4g; Carbohydrate 0.7g

Variations:
Add wholegrain Dijon mustard and seasoning to taste.
Herb mayo: Add 125 ml chopped soft-leaf, fresh herbs like parsley, basil, dill or chives, lemon juice and seasoning to taste.
Tartare sauce: Add 4 finely chopped cocktail gherkins, 3 finely chopped spring onions, 15 ml capers, chopped, and lemon juice and chopped Italian parsley to taste. Season well and serve with fish or even chicken.
Spicy mayo: Stir in dried chilli flakes or freshly chopped chillies. Wasabi paste is also a great addition, heavenly dolloped on seared tuna.
