Herbed white sauce

  • 250
    fat-free milk
  • 125
    low-fat, evaporated milk
  • 125
    vegetable stock
  • 2 whole, peeled garlic cloves, bruised
  • 1 onion, quartered
  • 5
    English mustard powder
  • 2-3 tsp cornflour mixed with a little water
  • 30
    roughly chopped Italian parsley or dill
  • salt and milled black pepper


Heat both milks, stock, garlic, onion and mustard powder in a saucepan at a low heat to infuse flavours, for about 10 minutes. Remove from heat, remove onion and garlic. Return to heat, stir in cornflour mixture a little at time, whisking continuously to cook to desired thickness. Add herbs and season to taste.
