Ingredients (10)

16.00 baby potatoes — parboiled
1.00 red pepper — cubed
3.00 courgettes — thickly sliced
100.00 g baby corn — halved
8.00 patty pans
40.00 ml fresh chillies — 573
2.00 garlic — cloves, crushed
40.00 ml fresh basil — chopped
25.00 ml fresh parsley — chopped
30.00 ml lemon juice

Method:

Thread the vegetables on to 12 kebab sticks. Brush with half the oil. Grill over medium coals on the fire, turning occasionally.
Mix together remaining oil, garlic, herbs and lemon juice. Brush half the mixture on to the kebabs after they have been cooking for about 5 minutes. Once vegetables are charred and cooked, remove from the grill and brush with remaining herb mixture. Season with salt and freshly ground black pepper and serve. Serves 4.
