Ingredients (10)

4.00 salmon trout — cutlets
couscous
fresh coriander — sprigs, to garnish
MARINADE
2.00 ml chilli paste
65.00 ml fresh chillies — 573
1.00 lemon juice
2.00 ml sugar
15.00 ml fresh parsley — chopped
salt and freshly ground black pepper
15.00 ml fresh coriander — chopped

Method:

Preheat grill.
MARINADE: Mix all ingredients together well.
Brush fish cutlets on both sides with marinade and grill on one side for about 7 minutes, turn and grill on other side for 3 minutes. Fish should be easy to flake but not too dry.
Once cooked, brush fillets again with a little of the marinade and serve on a bed of couscous.
Garnish salmon trout with fresh coriander leaves.
