Ingredients (11)

HERB DRESSING
40.00 ml fresh mint — chopped
40.00 ml fresh parsley — chopped
10.00 ml fresh coriander — optional
4.00 garlic — cloves, crushed
1.00 fresh ginger — grated
100.00 ml soy sauce
4.00 lemon — juice only
60.00 ml honey
150.00 ml fresh chillies — 573
SALAD
500.00 g white rice
0.00 spring onions — chopped

Method:

Dressing
Mix all the ingredients and set aside.
Salad
Cook the rice in boiling salted water until just done. Drain and rinse.
Add the salad dressing to the hot rice and leave to cool.
Add the spring onions and stir.
Hint
Make double the quantity of salad dressing and use it on the Lentil and bean salad (see recipe).
