Ingredients (15)

6.00 chicken breast fillets
0.00 stock — chicken
0.00 celery stalks — leaves
1.00 onion
0.00 black peppercorns — whole
1.00 bay leaves
Sauce
150.00 ml yoghurt — thick Bulgarian
150.00 ml sour cream
15.00 ml mayonnaise
15.00 ml lemon juice
2.00 garlic — cloves
0.00 fresh chives — dill or basil
1.00 fresh parsley — bunch
2.00 ml mustard — powder
0.00 salt and freshly ground black pepper

Method:

Arrange breasts in a large pan, pour over chicken stock, add celery leaves, onion, peppercorns and bay leaf, cover and bring to a gentle simmer.
Simmer for about 10 to 12 minutes, until just cooked through.
Remove from heat and, if time allows, cool in broth. Remove and chill.
Meanwhile, mix sauce ingredients together.
Slice breasts, pour over sauce and decorate with lemon wedges, watercress and salad leaves.
