Ingredients (10)

500.00 g prunes
water
4.00 pears — peeled, cored and diced
450.00 ml apple — cider
565.00 ml sugar
1.00 lemon — zest only
2.00 cloves — whole
5.00 ml allspice
fresh ginger
1.00 cinnamon — stick

Method:

Cover the prunes with water and soak overnight. Place the remaining ingredients in a saucepan (preferably stainless steel) and heat until the sugar has dissolved. Stir every now and then. Drain the prunes and add them to the mixture. Bring to the boil and simmer for about 15-20 minutes or until the pears are soft but still whole. Spoon into sterilised bottles and seal. Store for 3 weeks before serving.
Makes 1,3 litres.
