  • 2
loaves (round, and oval or French loaf)
  • 110
    butter, softened
  • 25
    parsley, finely chopped
  • 15
    chives, chopped
  • 15
    fresh thyme, finely chopped
  • 1
    clove garlic, crushed
  • 10
    lemon juice
  • salt
  • pepper

Preheat the oven to 180 ºC (350 ºF). Slice the oval or French loaf, but do not cut right through. Cut the round loaf into wedges. Blend the butter with the herbs and lemon juice and season to taste with salt and pepper. Butter each slice or wedge on both sides. Wrap each loaf in large pieces of aluminium foil and place in the oven. Bake for about 20 minutes or until the crusts are crisp. Serve hot. The loaves can also be warmed in the microwave oven. Wrap in paper towelling and microwave for about 1-2 minutes on 100 per cent power. Repeat until the butter has melted and the loaves are heated through. The time will depend on the size of the loaves. (The crusts will not be crisp if done in the microwave).
